A new ‘Knoff-hoff’ every week – this week:
For 40 kg of cheese …
… it takes around 480 litres of milk. That’s almost as much as is contained in our Comté Juraflore AOP, for example, which weighs around 39 kg. At ÖMA, we cut it into handy 3-kg pieces so that you can sell it easily.

40 Years of
: Our History
- 1986: The company was founded by Heide and Hermann Beer in a garage in Kisslegg
- 1987: The company employed 8 staff
- 1992: Ökologische Molkereien Allgäu specialises in the dairy products range (yellow line)
- 1993: The number of suppliers rises to 40
- 1996: Sales exceed €10 million for the first time
- 1997: Export activity to neighbouring European countries increases.
- 1998: Trading volume reaches approximately 100 varieties and 1,600 metric tons per year
- 1998: The company employs 18 staff.
- 1999: Established a sales office in France to serve international customers
- 2000: Trade volume reaches around 130 varieties, approximately 2,000 metric tons per year; turnover stands at around €13 million; the workforce numbers 28; the customer base totals around 80.
- 2001: The Beer family sells the company to long-standing partners on the supplier side. The co-operatively organised Domspitzmilch – now Bayernland eG – takes over the company
- 2003: Two additional cooperative dairies—Allgäu Milch Käse eG in Kimratshofen and Allgäuer Emmentalerkäserei Leupolz eG—become shareholders. Michael Welte, master cheesemaker and managing director of the cooperative dairy in Leupolz, assumes the same role at Allgäu Organic Dairies.
- 2005: Turnover growth continues, with the €20 million mark being reached for the first time. Expansion of the product range to become a full-range supplier of dairy products (yellow line)
- 2008: ÖMA employs around 40 staff; expansion of the already established training programme
- 2009: Co-founding of the WerteMarken manufacturers’ association
- 2010: Sales reach €25 million for the first time
- 2011: Intensified sales activities and strengthened brand development following the appointment of Manuel Pick to the management board
- 2012: ÖMA collaborates with dairy farmers on a dedicated nature conservation project to strengthen environmental protection; launch of a standalone training division, ÖMA SchulungsWerk.
- 2014: Management change: Ulrich Kurz now co-manages the company alongside Michael Welte. Relocation of ÖMA – Ökologische Molkereien Allgäu to the sunniest spot in Bavaria: Lindenberg in the Allgäu
- 2015: The company achieves a turnover of €30 million for the first time
- 2016: Ökologische Molkereien Allgäu celebrate their 30th anniversary
- 2018: The ongoing initiative to make packaging more sustainable returns to the forefront
- 2018: The company employs around 50 staff
- 2019: Trading volume exceeds 5,000 metric tons
- 2020: The company achieves a turnover of €40 million for the first time
- 2023: Ulrich Kurz moves from the executive board to become Head of Administration
- 2023: ÖMA unveils its new brand identity with a redesigned logo and an accompanying campaign
- 2026: ÖMA celebrates its 40th anniversary and releases two special anniversary cheeses crafted exclusively for the occasion.

We make a conscious effort to use resources such as water and energy sparingly and are rethinking even our packaging – by cutting back, reducing materials and, where possible, using recyclable materials. Sustainable practices permeate every area of our business and follow a holistic approach that combines environmental protection, social responsibility and economic viability. In this way, we support small-scale, organic farming.
We have also established clear social values: long-standing partnerships with our partner production facilities, the safeguarding of regional jobs and our cooperative roots have defined us for decades. We stand for fair working conditions, social standards, flexible working arrangements such as working from home, training and further education, and genuine equality of opportunity. Our staff share in our success; transparent supply chains, reliable partnerships and support for social projects and nature conservation demonstrate our commitment.
Animal welfare and health are inextricably linked to ÖMA: species-appropriate husbandry, cheese without unnecessary additives, the strictest quality controls and near-universal certification by organic associations guarantee the highest safety standards.
Our range of more than 250 products made from organic cow’s, sheep’s, buffalo’s and goat’s milk demonstrates that these values shine through in the taste. From artisanal production methods, such as Emmental made in a copper cauldron, to innovative varieties like burrata or baked Camembert – tradition and creativity come together here. After all, true enjoyment arises where provenance is honest and flavour is authentic.
