Shelf life
“Shelf life” refers to the overall microbiological and chemical-physical condition of a foodstuff that possesses the sensory properties specified in quality standards and legal regulations.
The “best before” date printed on the product says nothing about the shelf life of a foodstuff. Cheese can still be enjoyed even after the best-before date has passed. The best-before date defines the date up to which the properties of a foodstuff remain unchanged in its current form. For cheese, this means that a soft cheese retains its sensory characteristics up to this date. Once the so-called best-before date has passed, the cheese’s sensory characteristics change; for example, it becomes softer and, in most cases, has a more intense flavour. However, it is still perfectly safe to eat. Many connoisseurs even prefer this more mature texture and flavor profile.
Spoilage, when it occurs, is usually visible or detectable by smell or taste.
