Modules

The image presents an assortment of our artisanal Allgäu cheeses, including round slices of organic cheddar paired with fresh strawberries, a selection of other specialty cheeses, and a few complementary snacks.
The one-day seminar builds on existing cheese knowledge (Cheese Knowledge) and covers additional topics that professionals need to know. The main focus is on sensory evaluation. Through guided tastings of selected cheese varieties, participants learn to identify the key sensory components—primarily through smell and taste. Together, participants build the sensory vocabulary essential for confident, consultative sales. The program also covers lactose intolerance, histamine intolerance, gluten sensitivity and cow’s milk protein allergy in detail.
The practical segment focuses on cheese displays and presentation at the counter, and participants sample a range of cheese-based creations together. A selection of cheese platters is also showcased to give customers something special.

Ample tasting opportunities are built in, so participants can sample many varieties and creations—both during structured sensory sessions and at refreshment breaks.

This tried-and-tested blend of knowledge and hands-on experience, honed over many years, deepens product understanding, builds confidence in presentation and handling, and equips participants with the expertise to buy and sell cheese professionally.

Our one-day seminars, ‘Cheese Knowledge for Beginners’ and ‘Cheese Knowledge for Advanced Learners’, are longer but still intensive, with around 8 hours of learning time scheduled.

For a comprehensive refresh and expansion of your cheese expertise, we recommend our 3-day Allgäu Cheese Seminar. Over these three days, you will deepen your theoretical knowledge, hone practical skills, and visit a farm and a cheese dairy.

Certifications are awarded exclusively in our in-person seminars, and no exam is required.
Am I a beginner or an advanced user?

Then the Cheese Knowledge seminar for beginners is the right choice.

Have you been working at the cheese counter for some time, have you already attended an Allgäuer cheese seminar or a seminar for beginners, and would you like to refine and deepen your knowledge of cheese?
Then we warmly welcome you to the Cheese Knowledge seminar for advanced learners.
