Histamine intolerance
Causes
Histamine intolerance (histaminosis) is an intolerance to histamine, caused either by a deficiency of the histamine-degrading enzyme diamine oxidase or by an imbalance between histamine and diamine oxidase.
Histamine intolerance can trigger symptoms for several reasons: consuming histamine-rich foods, consuming histamine-releasing substances, consuming other biogenic amines, inhibition of diamine oxidase by certain medications, gastrointestinal infections, and a congenital enzyme deficiency (very rare). (very rare).
Enjoying cheese despite histamine intolerance
As part of a healthy, balanced diet, it is neither possible nor advisable to completely avoid foods containing histamine. The recommendation for people with histamine intolerance is therefore to include histamine-rich and histamine-releasing foods in their daily diet in healthy quantities that they can tolerate. As regards cheese: the shorter the maturing period, the lower the histamine content; however, there is no such thing as histamine-free cheese. By taking a personalised and cautious ‘trial-and-error’ approach, those affected can therefore also enjoy small quantities of longer-matured sliced and hard cheese – cream cheese, Pasta filata, soft cheese and young sliced cheese can usually be consumed without concern; since histamine intolerance is not a true food allergy and the amount consumed is therefore the decisive factor.
Studies also show that pairing cheese with foods rich in vitamin C (such as sea buckthorn, green and Brussels sprouts, peppers, broccoli) and vitamin B6 (found in whole-grain bread, yeast, nuts, lentils, field salad, bananas) can help lower histamine levels. etc.) and vitamin B6 (found, for example, in wholemeal bread, yeast, nuts, lentils, lamb’s lettuce, bananas, etc.) can be reduced.
