Cheese fondue
Cheese fondue has now become a popular cheese classic.
To ensure your fondue is a complete success, we’ve put together 5 tips and tricks!
Amount per person
How much cheese per person? The amount depends on the accompaniments. As a general rule, plan on 5–7 oz (about 150–200 g) of cheese per person.
Choice
of cheeseOpinions vary: the original comes from Switzerland and features Gruyère and Emmentaler. The stronger version works well with Weißlacker. Our ÖMA blend contains mountain cheese, Emmentaler and Cheddar, delivering a particularly well-balanced flavour.
Does it always need alcohol?
White wine and kirsch are traditional, but buttermilk, beer or grape juice can also work—just make sure the liquid has a little acidity. Not
creamy enough?
If the mixture stays grainy, add a splash of lemon juice and a teaspoon of cornstarch to smooth it out. If the mixture remains grainy, it may lack starch or acidity. A splash of lemon juice and a small amount of cornflour will do the trick.
Insider tip from Switzerland
: serve black tea with your cheese fondue – it aids digestion and provides a wonderful flavour complement.
